Jackfruit Flour Pancakes
Ingredients:
1 cup whole wheat flour
1/4 cup jackfruit flour
1 tsp baking powder
1/4 tsp salt
1 cup milk
1 tbsp oil
1 tbsp jaggery powder (optional)
Method:
In a bowl, mix together the whole wheat flour, jackfruit flour, baking powder and salt.
In another bowl, whisk together the milk, oil and jaggery powder if using.
Pour the milk mixture into the flour mixture and whisk until a smooth, lump-free batter forms.
Heat a non-stick pan over medium heat. Pour a ladle full of batter onto the pan and spread slightly.
Cook for 2-3 minutes until bubbles appear on the surface. Flip and cook the other side until golden brown.
Serve the jackfruit flour pancakes hot with maple syrup, honey or fruit compote.
