Jackfruit Cutlets
Ingredients:
2 cups ripe jackfruit, mashed
1 potato, boiled and mashed
1 onion, finely chopped
2 green chilies, finely chopped
1 tsp ginger-garlic paste
1 tsp cumin powder
1 tsp coriander powder
1 tsp garam masala
1/2 tsp red chili powder
Salt to taste
Oil for frying
Breadcrumbs for coating
Method:
In a bowl, mix together the mashed jackfruit, potato, onion, green chilies, ginger-garlic paste and spice powders. Season with salt.
Divide the mixture into lime-sized balls. Flatten each ball into a patty.
Coat the patties with breadcrumbs from all sides.
Heat oil in a pan. Fry the jackfruit cutlets until golden brown on both sides.
Drain on a paper towel-lined plate. Serve hot with mint chutney.
