Jackfruit Curry

Ingredients:

  • 2 cups ripe jackfruit, cubed

  • 1 onion, sliced

  • 3 tomatoes, chopped

  • 2 green chilies, slit

  • 1 tsp ginger-garlic paste

  • 1 tsp coriander powder

  • 1 tsp cumin powder

  • 1 tsp garam masala

  • 1/2 tsp turmeric powder

  • 1 cup coconut milk

  • 2 tbsp oil

  • Salt to taste

  • Coriander leaves for garnish

Method:

  1. Heat oil in a pan. Add the onions and fry until translucent.

  2. Add the ginger-garlic paste, green chilies and jackfruit. Sauté for 2-3 minutes.

  3. Add the tomatoes, spice powders and coconut milk. Mix well and bring to a boil.

  4. Reduce heat and simmer for 10-15 minutes until jackfruit is tender.

  5. Season with salt. Garnish with coriander leaves before serving.
