Jackfruit Curry
Ingredients:
2 cups ripe jackfruit, cubed
1 onion, sliced
3 tomatoes, chopped
2 green chilies, slit
1 tsp ginger-garlic paste
1 tsp coriander powder
1 tsp cumin powder
1 tsp garam masala
1/2 tsp turmeric powder
1 cup coconut milk
2 tbsp oil
Salt to taste
Coriander leaves for garnish
Method:
Heat oil in a pan. Add the onions and fry until translucent.
Add the ginger-garlic paste, green chilies and jackfruit. Sauté for 2-3 minutes.
Add the tomatoes, spice powders and coconut milk. Mix well and bring to a boil.
Reduce heat and simmer for 10-15 minutes until jackfruit is tender.
Season with salt. Garnish with coriander leaves before serving.
