Jackfruit Biryani

Ingredients:

  • 2 cups basmati rice

  • 1 cup ripe jackfruit, cubed

  • 1 onion, sliced

  • 3 tomatoes, chopped

  • 2 green chilies, slit

  • 1 tsp ginger-garlic paste

  • 1 tsp coriander powder

  • 1 tsp cumin powder

  • 1 tsp garam masala

  • 1/2 tsp turmeric powder

  • 1/2 cup yogurt

  • 2 tbsp oil

  • Salt to taste

  • Mint and coriander leaves for garnish

Method:

  1. Soak the rice for 30 minutes. Drain and set aside.

  2. Heat oil in a pan. Add the onions and fry until golden brown.

  3. Add the ginger-garlic paste, green chilies and jackfruit. Sauté for 2-3 minutes.

  4. Add the tomatoes, spice powders and yogurt. Mix well and cook for 5 minutes.

  5. Layer half the rice in a pot. Top with the jackfruit masala. Cover with remaining rice.

  6. Pour 1/2 cup water. Cover and cook on dum for 15-20 minutes.

  7. Fluff up the biryani with a fork. Garnish with mint and coriander leaves.
