Jackfruit Biryani
Ingredients:
2 cups basmati rice
1 cup ripe jackfruit, cubed
1 onion, sliced
3 tomatoes, chopped
2 green chilies, slit
1 tsp ginger-garlic paste
1 tsp coriander powder
1 tsp cumin powder
1 tsp garam masala
1/2 tsp turmeric powder
1/2 cup yogurt
2 tbsp oil
Salt to taste
Mint and coriander leaves for garnish
Method:
Soak the rice for 30 minutes. Drain and set aside.
Heat oil in a pan. Add the onions and fry until golden brown.
Add the ginger-garlic paste, green chilies and jackfruit. Sauté for 2-3 minutes.
Add the tomatoes, spice powders and yogurt. Mix well and cook for 5 minutes.
Layer half the rice in a pot. Top with the jackfruit masala. Cover with remaining rice.
Pour 1/2 cup water. Cover and cook on dum for 15-20 minutes.
Fluff up the biryani with a fork. Garnish with mint and coriander leaves.
