Jackfruit and Almond Cookies
Ingredients:
1/2 cup sattu flour
1/4 cup jackfruit flour
1/4 cup sesame and ground flax powder
1/2 cup pumpkin seed powder
1/2 cup grated coconut
3 tbsp organic jaggery powder
2 tbsp organic A2 ghee
2 tsp cold-pressed virgin coconut oil
1 tsp fennel or cardamom powder
Salt to taste
Method:
Mix the ghee, oil and jaggery powder until light and fluffy.
Add the spices, flours, coconut and seeds. Mix gently without kneading.
Roll out the dough into thick chapatis and cut into cookie shapes.
Bake at 170°C for 12-15 minutes until lightly browned.
Allow to cool and enjoy the high-fiber, low-carb cookies.
